Named after the famous Carya pecan praliné with caramelized pecan pieces, the Carya choux gives pecan nuts pride of place. Beneath its fluffy, crisp choux pastry covered with ground almonds and cocoa nibs, the Carya choux has a pecan praliné-flavored sweet pastry cream delicately piped onto a moist sponge. This irresistible moment’s indulgence is the ideal complement to Caramelo, Caracas, and Guayaquil choux buns.

The Carya choux bun is as stimulating to the mind as it is the taste buds, having been created in a reinvented Maison style. Its crunchy texture is the first surprise it has in store for you: Its shell rests on a base of moist poundcake-style, double-baked sponge, while its uppermost part - covered with a nougatine made from ground almonds and cocoa nibs - makes the choux even crispier. The middle is piped by hand and filled with a butter-free, egg-free pastry cream flavored with pecan praliné. We love this new pecan delicacy’s particularly fresh, creamy and crispy feel.
