Savoir-Faire and craftsmanship

Created in 1990, over three decades ago, the Maison Éclair, originally chocolate, has withstood the trends of smaller formats. Still generous with its 16 cm, it is savored with delight. Easily recognizable, its fans appreciate its pronounced, mildly sweet, and lingering taste. They praise the finesse of its blonde choux pastry, smooth and soft, piped while warm to avoid cracks. The creamy pastry cream, whose lightness and freshness often come from its ganache-based recipe, is particularly appreciated. And above all, its glaze, far from the traditional fondant, is made of chocolate coating, offering a less sweet and more distinctive flavor signature. Our Éclairs are handcrafted daily. At 3:30 each morning, our pastry chefs prepare them in our Nanterre workshop, located just a few kilometers from our Parisian boutiques.
