Named after the famous Guayaquil dark chocolate and vanilla ganache, the Guayaquil choux gives pride of place to the sweet notes of vanilla. Beneath its soft, crispy choux pastry exterior covered with flaked almonds, the Guayaquil choux has an intense Madagascan vanilla pastry cream delicately piped onto a soft sponge. This moment’s indulgence is the ideal complement to Carya, Caramelo, and Caracas choux buns.

Its crunchy texture is the first surprise it has in store for you: Its shell rests on a base of moist poundcake-style, double-baked sponge, while its uppermost part - covered with slivered almonds - makes the choux even crispier.
