AN INSOLITE INNOVATION
Followers of Nicolas Cloiseau know his mission: to challenge norms. His approach is to push the boundaries of taste and make chocolate resonate like never before. Experience chocolates crafted without cream or butter, aligning with the Maison's natural ethos (Naturellement fruit), water-based ganaches (Bali Noël 2024), chocolates aged in oak barrels with an intense whisky flavor, yet alcohol-free* (Alchimie), frozen delights (Givrés), marine-inspired creations (Insolite Huître), and vibrant flavors (Insolite Curry).
For INSOLITE, his focus didn't start with taste, but with process: Nicolas' idea was to explore all the raw materials that can be rehydrated or infused into the cream of a ganache, crushed or ground into a praliné, or substituted for butter or cream. This approach opens endless possibilities, pushing the boundaries of taste and embracing unconventional combinations while maintaining the Maison's signature subtleties.
