Named after the famous Caramelo milk chocolate and sweet caramel ganache, the Caramelo choux is an ode to the nostalgic feel of caramel dotted with fleur de sel. Beneath a fluffy but crispy choux pastry exterior with chopped and ground hazelnuts, the Caramelo choux has a delicious caramel pastry cream delicately piped onto a moist sponge. This moment’s indulgence is the ideal complement to Carya, Caracas and Guayaquil choux buns.

The Caramelo choux bun is as stimulating to the mind as it is the taste buds, having been created in a reinvented Maison style. Its crunchy texture is the first surprise it has in store for you: Its shell rests on a base of moist poundcake-style, double-baked sponge, while its uppermost part - covered with a nougatine made from ground almonds and cocoa nibs - makes the choux even crispier. The middle is piped by hand and filled with a butter-free, egg yolk-free pastry cream flavored with salted caramel. We love this new salted butter caramel delicacy’s particularly fresh, creamy and crispy feel.
