Nicolas Cloiseau invents Chocolate Chills a collection that blows hot and cold on our chocolate cravings. The idea? His ganache cubes can be carried at room temperature and then frozen at home. And then, surprise, once frozen, the flavors are amplified by the cold. This opens up a new kind of experience, a fresh, airy, and crunchy sensation of reinvented chocolate. Four duo recipes to discover: Dark double vanilla Madagascar/Papua New Guinea, Milk caramel with sea salt, Mandarin-cinnamon button, Pineapple-Tarragon.
Tasting : Enjoy those chocolates frozen by placing them in your freezer. Either immediately after purchase, or later but before the maximum freezer date listed on the back of the box. Once frozen, enjoy the frozen ganache cubes straight out of the freezer. You have two months of storage in the freezer. If you take out the box, put it back in the freezer quickly so as not to defrost all the ganache cubes.

Is this a cube of ganache to enjoy frozen? This is the promise of this chocolate innovation by Nicolas Cloiseau. His idea: to recreate the feeling of a frozen chocolate mousse but without ice cream. He kept the cream in his ganaches, he also kept the chocolate taste and intensity, only the texture changed. It is by incorporating his ganache into a milk foam that he obtains the desired structure. Tasted frozen, the foamy chocolate, both cold and melting, retains the expected feeling: a fresh chocolate foam whose coating crunches. Chocolate has never been so proud to go below 0°.
