Irresistibly drawn to the Maison chocolate, the Chocolate Almond Galette des Rois emerges from its frangipane in a tailor-made role signed by Nicolas Cloiseau. At its heart, the recipe takes a step aside. Soft and creamy, the almond cream with ganache reinvents the genre. Almonds and 68% dark chocolate engage in a disconcerting attraction. The intense notes of chocolate mixed with almond reveal themselves in a melting and velvety texture. All this is nestled in a just-caramelized homemade puff pastry.
