La Maison du Chocolat's truffles are flavored with cognac. A cognac is a delicate blend of several eaux-de-vie from both Grande Champagne and Petite Champagne. Once again, La Maison du Chocolat has created an exceptional product. This subtle blend is a truly delicious treat. Our chocolate truffles contain a creamy mousse ganache with a touch of alcohol and are coated in a thin layer of crisp chocolate before being rolled in cocoa powder. Each of these steps is carried out by hand in our ateliers by our chocolatiers. The flavors are devised and created by Nicolas Cloiseau, our Master Chef and holder of the prestigious title of Meilleur Ouvrier de France in chocolate making. There is no doubt that anyone who loves liqueur chocolates will be captivated by the intensely delicious taste of our cognac chocolate truffles.

Craftsmanship and blending chocolate and alcohol

No fewer than 3 days are required for the artisanal production of our French-style Fine Champagne Truffles, which feature a mousse center, a thin layer of chocolate, and a cocoa coating. The combination of chocolate, cream, and butter used to create these ganache truffles is initially smooth and silky before it is spread out on marble surfaces. 24 hours later, this melt-in-the-mouth mixture has crystallized, taking on a mousse-like texture. Slowly worked with a mixer to incorporate air, the ganache develops a light, airy texture. 24 hours later, each sphere is coated with a veil of chocolate and plunged into bitter cocoa powder. Cognac is blended with cocoa for an edgy combination. This chocolate/alcohol mixture retains the varied aromatic flavors of both ingredients. Fine champagne cognac's amber notes bring out the natural flavors of raisins and nuts.
