Carya, chocolate majesty, crowns the pecan. Her name, borrowed from the pecan tree, announces her character: queen of nuts, she makes her entrance in a chocolate galette. At the heart, it melts, it crunches. The tender dark chocolate ganache twists with the soft pecan frangipane. Around it, everything is contrast. The puff pastry: golden, lightly caramelized, eager under the bite. The roundness of praliné grains, the crunch of caramelized pecans, the depth of cocoa-dusted shavings. And this perforated chocolate crown, delicate and graphic… Clad in dried fruits and chocolate, Carya has all the makings of a queen.

Warm the galette slightly for 10 minutes in an oven that has been preheated to 160 °C (thermostat 5) and then turned off, for optimal tasting.
