The Parisian Bars
Two textures and flavors unite in a single tablet, creating double the complexity. The smooth side, a 2mm chocolate layer, is poured on cold marble. Speed is key to cover it post-crystallization. If too cold, layers won't stick; if too hot, the first melts. Three chocolatiers handcraft the Parisian Bars, ensuring Nicolas Cloiseau's flavors shine through precise thickness.
