For its new edition of Chef en Résidence, La Maison du Chocolat gives carte blanche to the clever mind of Yann Couvreur*.

It is his desire for reciprocity that makes the difference: guest at Maison all right, if Nicolas Cloiseau* is also his guest.

The two chefs bring together the best of their signatures to share their chocolate vision. The result is two regressive pastries and an addictive chocolate bouchée, as cunning as a fox.

Perfect union of the two Yann Couvreur's pastries, the Clever Fox Bouchée Gift Box takes the textures and the tastes of the mousse cakes.

The fox is on the horizon, gourmandise is in the crosshairs. With chocolate in the background, Nicolas Cloiseau dares all textures.

Three recipes in one, rich in taste and emotion:

  • Caramel Bouchée: Soft and creamy caramel mousse with fleur de sel and vanilla, coated with dark chocolate.
  • Fox Bouchée: Ivory chocolate fox with blue vanilla, on a caramelized milk chocolate bar with slivers of pecans.
  • Pecan Praliné Bouchée: Pecan praline, milk and ivory chocolate and Guérande salt crystals, coated with milk chocolate.

For La Maison du Chocolat, Yann Couvreur creates two very regressive pastries. One is the identity of the Yann Couvreur Pâtisserie house, with its signature flavors, and the other one is a chocolate version. 

Onwards to the famous blue vanilla of La Réunion (Yann Couvreur's iconic taste), to roasted pecan nuts, to the pecan praliné with “saline” notes and to airy meringue. It all features intense white chocolate, dark chocolate or tinted milk depending on the balance you are looking for.

Dark Ruse Mousse Cake

Chocolate mousse, pecan praliné, chocolate meringue, enrobed with dark chocolate and cocoa nibs and decorated with a dark chocolate fox with a pecan praline.

Milk Ruse Mousse Cake:

Blue vanilla mousse, sweet caramel, pecan praliné, plain meringue, enrobed in milk chocolate and cocoa nibs and decorated with a white chocolate fox with a pecan praline.
