Imagine biting into a perfectly roasted almond, its crunch giving way to a silky layer of chocolate that melts on your tongue. The process begins with carefully selected almonds, chosen for their size, freshness, and flavor. These almonds are gently roasted to enhance their natural nuttiness and to create the ideal crunchy texture. Next, they are placed in traditional copper kettles, where they are continuously tumbled and coated with streams of liquid chocolate. This "turbinating" technique ensures that each almond is evenly covered, layer by layer, with either smooth milk chocolate or rich dark chocolate.
With each pass, the chocolate coating thickens and hardens, creating a glossy, decadent shell that perfectly balances the almond’s crunch. The milk chocolate version offers a creamy, sweet experience, while the dark chocolate variety brings a deeper, more sophisticated cocoa flavor with subtle bitter notes.
