After pouring his hot chocolate into a whisky barrel and exploring the principle of flavor absorption in wood, Nicolas Cloiseau takes a new approach for the second edition of his Alchemy series. His Gin Chocolate bar captures the aromatic essence of the 19 botanicals* that infuse the gin before distillation, delivering a chocolate with an intense gin flavor, but without the alcohol**.
Here, no barrels, no absorption, no refining, but the reuse of "botanicals" that open up a new field of exploration in chocolate. Delivered fresh, reduced to a paste, and incorporated directly into the chocolate coating, Nicolas Cloiseau had the intuition of something new to transcribe the aromatic profile of this spirit.
