STAR-STRUCK BÛCHE (2021 exceptional bûche)

As always, the chocolate of Nicolas Cloiseau features harmonies as subtle as they are gourmand. The Star-Struck bûche, exceptional artistic creation for 2021, is no exception. Featuring fruit, praliné and chocolate, with a nod to the fresh violette de Solliès (Var) fig, cut, poached, barely candied, and surrounding a heart of praliné featuring caramelized almonds ground in a traditional way.  Everything is on a moist sablé cake with crunchy almonds.  The intensity of chocolate mousse with acidulous notes 69% pure origin Island of São Tomé all comes together to give the impression of extreme lightness.  Delicate Holiday ornaments enrobe the bûche with their delicate ties in crunchy chocolate, the mark of a star-struck dessert!

CARACAS BÛCHE (2021 traditional bûche)

Calling all aficionados of gourmand chocolate, the Caracas bûche is just for you. Known for its robust chocolate, and in homage to the bonbon of the same name, it stands on its own with the iconic crunchiness of a petit rocher. His milk chocolate crémeux 46% featuring silky dark chocolate mousse 64%, pure origin Dominican Republic, invites the chocolate tones so desired. Without counting the layer of almond praliné and the cocoa almond cake, on both sides the cocoa crumble, that play hand in hand crunchiness and creaminess.

MARACUJA BÛCHE (2021 traditional bûche)

Crisp, light and exotic describe this Maracuja bûche recipe toasting the popular pairing of fruit and chocolate.  Known for its intense chocolate, with a nod to the iconic bonbon of the same name, in its center the fruit is expressed in four ways: passionfruit crémeux adds sweet acidulous notes, intense dark chocolate with passionfruit struts its flavor, the chocolate mousse and crunchy chocolate layer both of them together distill cocoa tones particularly acidulous of a pure origin chocolate from Brazil.  The moist almond cake with lime, invigorated by lime cream, enlivens everything.

PRALINE CHOCOLATE BÛCHE (2021 traditional bûche)

If you can’t choose between praliné and chocolate, the Praliné Chocolate bûche is the perfect solution.  In this lovely embodiment of gourmandise, milk chocolate praliné mousse paired with almond/hazelnut praliné and light vanilla crémeux,  distill sweet, caramelized notes. All this enrobes the cake with whole caramelized hazelnuts, scattered roasted chopped almonds offering a counterpoint in a symphony of crunchy nuts. The dark chocolate mousse 64%, pure origin Madagascar, enrobes everything in tones of cocoa. A gourmand pairing revealing the elegance of praliné in this totally addictive interpretation in chocolate.
