After an apprenticeship in Bayonne, then in Switzerland, he settled in Paris at La Marquise de Presles (caterers in the avenue de Wagram) and made himself a reputation as a gourmet, but also as a creator of chocolate delicacies.
In 1977, he opened the first Maison du Chocolat and immediately became a benchmark for his unusual and subtle associations of natural flavors coupled with chocolates from different origins.
Since then, he has carried on this extraordinary knowledge, which inspired the philosopher Jean-Paul ARON to call him The wizard of the ganache .
Today, he is surrounded by master chocolatiers who perpetuate his tradition on a daily basis with precise skills they have learned and acquired over time. Each creation is the fruit of a rigorous work, precise and detailed to obtain the best balance of flavours, as chocolate is very delicate to work with. |
