Theobroma cacao, scientific name of the cacao tree, means “food of the gods” in Greek. The Aztecs and the Incas consumed cocoa in the form of a thick liquid beverage to which they added spices and some corn flour. It was a nourishing and sacred food.

In the 16th century, cocoa was imported to Europe from Mexico. The Europeans over time enhanced it by adding sugar, vanilla and different aromas. Chocolate was a luxury beverage reserved for the elite of the time, notably the royal court. The industrial revolution permitted wider production and a more democratic distribution of this refined product.

Today chocolate is one of the most widely available foods but the finesse of luxury chocolate retains a chic and delicate aura.
